Tagliatelle al ragù a la bolognese

Origin: Center and North of Italy

Curiosity: Their name comes from the verb “cut” or “slicing”, since they are obtained by spreading the dough into thin sheet and cutting it, after having rolled up.
According to a legend, “bolognese tagliatella” were invented in 1487 by master chef Zefirano for the occasion of the marriage of his son with Lucrezia, daughter of Ercole I d’Este, Duke of Ferrara.
